George Killian's Irish Red

Ingredients: 
  • 1 cup celery, diced
  • 1 cup carrots, diced
  • 1 cup onion, diced
  • 4 strips Apple Wood Smoked bacon, chopped
  • 1/2 stick whole butter
  • 2 pounds domestic lamb meat, cut into 1 inch by 1 inch cubes
  • 2 pounds yukon potatoes, diced
  • 4 cups lamb stock
  • 2 cups "slurry" (corn starch and water)
  • 2 bay leaves
  • 1/8 cup thyme
  • 1 bottle of George Killian's Irish Red beer
  • mint leaf, for garnish
Directions: 
  1. Saute the bacon, celery, carrots and onions with the butter until the vegetables are tender and bacon is crisp.
  2. Add the lamb meat and cook until browned.
  3. Deglaze the pot with the Killian's beer, add the thyme and bay leaves. Add the lamb stock and bring to a simmer.
  4. Add the potatoes, and simmer until vegetables are tender and meat is cooked through. 
  5. Add the slurry at the end to thicken up the stew as desired.
  6. Plate and garnish with a mint leaf.
